In 2012-2013, GSI’s focus was on food and the environment. Because meat production usually requires larger amounts of resources than plant products do, it is good for the environment when people limit meat consumption.
Meatless Monday is a national initiative that beileves that “By cutting out meat once a week, we can improve our health, reduce our carbon footprint and lead the world in the race to reduce climate change” (meatlessmonday.com). Starting in the fall of 2012, Georgetown College’s dining services began participating in Meatless Mondays. The idea is for participants to voluntarily choose a meatless option, so the Caf participates by converting one of the hot meal lines to vegetarian options on Mondays. Other lines contain the standard menu, but students, faculty, staff and visitors are encouraged to choose a meatless option for the day.
